Chicken Tostados

Chicken Tostados
 These chicken tostadas can be ready to eat in about thirty minutes. Tostadas make a nice light lunch and are very kid friendly. My favorite and very Yummy!!
Ingredients
2 chicken breasts – shredded
 chichen Broth for cooking chicken
8 corn or flour tortillas
oil for frying tortillas
1 can refried beans
2 diced tomatos
2 cups shredded lettuce
1/2 chopped onion
1 can sliced olives
1/2 cup sour cream
Salsa ( opional)
canned green diced chillis,(opional)
Diced Avacado
Fresh ground pepper
Instructions.
Simmer the chicken breasts in chichen broth until just cooked through.
Shred the chicken breasts with a fork and set aside.Add seasoning if you like.

Fry tortillas in a small amount of oil till crispy. Place on paper towel.
Heat the refried beans in a pan over low heat. Shred two cups of lettuce.
Once the beans are warm assemble the tostadas.
Spread the refried beans on the tostada.
Add a quarter cup of shredded chicken( seasoned if you like)
Shredded cheese, shredded lettuce  chopped onion and  sliced olives, chillies, and tomatoes and avacodo.
Top with salsa and  sour cream. And Fresh ground pepper.
Serve immediately.

Note-
Tell your kids that they are eating flat tacos. They will get a kick out of it.
I always have my chicken cooked and ready to go when I make these.  I also add Taco seasoning to my chicken, or my homemade salsa.  I don't always have all of the topping on hand so just use what you have. They will still be good!
 We also like to top them with just refried beans instead of meat.
