My Favorite Pumpkin Bars
This recipe is from one of my favorite magazines "Tea Time" and it is very good. It is served at "Civil-la-Tea's" a tea room.
1-29 ounce can pumpkin
1-12 ounce can evaporated milk
1 cup sugar
3 eggs
2 tsp cinnamon
1/4 tsp cloves
1/2 tsp salt
1/4 tsp nutmeg
1 box yellow cake mix
1cup butter, (2 sticks) melted
1 cup chopped pecans, optional
Preheat oven to 350. and oil 9 by 13 baking pan. In a lg bowl, mix together pumpkin,evap. milk, sugar, eggs, cinn, cloves, salt, and nutmeg. Pour in pan. Sprinkle with dry cake mix, pecans, and drizzle with melted butter.
Bake for 45 mins or so. Cool and serve.Top with whipped cream if desired.
